SERVING FAMILIES ON THE MAINLINE
I think most people know that I don’t eat meat. I haven’t for 15 years. Although a revision to that statement should be made. When I was pregnant with Blair, I really felt like I needed chicken wings. In fact, the only thing I have ever had a hard time not eating since becoming a vegetarian has been chicken wings. So, I gave in when I was pregnant and I ate wings. Then I became obsessed and I wanted to try all of the chicken wings that everyone says are “the best”. The consensus that I came to is that the best wings are actually at Longhorn Steakhouse. I like a good, crispy, dry rub wing, and Longhorn’s are unmatched. The buffalo sauce that accompanies them is also *chef’s kiss*. Since having Blair, I will still eat 3 kinds of chicken (only sometimes). They are; wings from Longhorn, blackened chicken from Ron’s Original, and Chik-Fil-A. Now that you have some background, I want to get into some recipes that I LOVE to use my Staub cocette for (as promised).
The first one is the No-Knead Cast Iron Bread recipe. It has been a millennial craze to make your own bread, and I am not excluded from that craze. Why? Because when you look into how many preservatives are in store-bought bread, it’s sickening. I started to notice that my bread was lasting for weeks in the bag. While to some, that may be a good thing, to me it is certainly not. So, this bread recipe is definitely one not to skip over. You may view that recipe here.
Second, I LOVE risotto, so when I found this Oven-Baked Risotto with Lemon and Asparagus recipe, I had to give it a go. Risotto is such an underrated dish in my opinion. It is also not completely unhealthy, especially if you know how to cook it properly. I do not usually like lemon in my food, but in the right application, it can be really good. Lastly, this recipe for vegan tortilla soup is delicious. Being a (mostly) vegetarian, I am often eating things like this – especially in the winter time. Recipes like this are so easy to make, the feed the whole family, and they last all week. How can you go wrong? Check out the recipe here.
These recipes further prove my point: that if you don’t have a Staub cocette, what are you doing with your life? As I continue to dive further into using my own, I am sure to construct recipes of my own, and as I do, I will come back to post those as well. I don’t mean to toot my own horn, but those close to me LOOOVEEE my cooking, and I am happy to share it with you.
